Black bean and Rice Salad
Ingredients:
2 cup chopped Romaine lettuce (or mixed greens, but I like Romaine because it's sturdier) 1/2 cup cooked rice (either white or brown) 1/2 cup cooked black beans--canned are fine 2 tbs. chopped red onion 1/4 cup chopped tomato 2 tbs. cilantro leaves Balsamic vinaigrette--we make our own, but Newman's Own is great.
Directions:
On a bed of chopped Romaine, layer in the following from bottom to top: rice black beans red onion tomato cilantro leaves
Add Balsamic vinaigrette to taste.
